GFCF Waldorf salad
This is so easy, it almost isn't really a recipe at all, but I'm sharing it nonetheless...
Vinaigrette ingredients:

1/4 cup apple cider vinegar
-
1 T honey
-
1 tsp sea salt
-
1/4 tsp freshly ground black pepper
-
1/3 cup your favorite extra virgin olive oil
Salad ingredients:
-
1 medium apple (pink lady for the color!)
-
2 stalks of celery, washed & chopped
-
3/4 cup walnuts, toasted & chopped
-
1 medium bunch of parsley, finely chopped
-
1-2 medium sized radicchio, washed and dried & roughly chopped
-
previously cooked turkey / chicken
Directions:
-
Make the dressing (and know whatever you don't use will keep in the fridge for up to 5 days)

Prep the salad ingredients and toss to combine

Enjoy!
