Crave-Worthy Chicken

Yes, yes...I know, we've all had BBQ'd chicken before and it's tasty...but I'd argue that this recipe (for which I give full original credit to the ever brilliant @pamelasalzman) is unlike anything you've tried before!  Or maybe I should just say is a big winner in our house, and always a hit at summer dinner parties.

Marinade ingredients:

  • 1/4 cup fresh lemon juice

  • 1/4 cup extra virgin olive oil

  • 1 T red wine vinegar

  • 4 cloves of garlic, minced

  • 2 T oregano (FYI - the original recipe calls for fresh oregano, which I'm sure would make it even better but I always used the dried oregano for ease and speed & even more concentrated oregano flavor!)

  • 2 T parsley, finely chopped (again here, tastes even better when you do this, but I often leave it out as I'm using the parsley for something else, and I still think it tastes delicious!)

  • 2 tsp sea salt

  • 1 tsp freshly ground black pepper

Directions:

  • Mix all of the above, and then add your boneless, skinless chicken thighs and let them marinate ideally overnight, if not at least for 3-4 hours in your fridge.

  • When you're ready throw the chicken pieces on the BBQ (discard the remaining marinade), and enjoy!
