Brussels Sprouts Salad

This is a creative way to enjoy the last of the Brussels sprouts until next winter (at least in Northern California anyway)…this is a very simple salad recipe, and it’s a nice way to enjoy the last of the Brussels sprouts

Ingredients:

  • 2-3 handfuls of Brussels sprouts

  • 1/2 cup raw pecans

  • 1/2 apple

  • 1 T brown mustard seeds

  • 3 T of extra virgin olive oil

  • 1 T of apple cider vinegar

  • 1 T of honey

  • 1 small shallot, finely diced

  • 1/2 tsp of sea salt

Directions:

Step #1 - Thinly slice the Brussels sprouts into ribbons, removing any woody stems…

Step #2 - Prep the dressing - mix all dressing ingredients above - tasting as you add your salt & pepper

Step #3 - Toast the pecans, and set aside

Step #4 - Chop the apple and set aside

Step #5 - Heat the skillet, add a little olive oil and then lightly sauté the ribbons of Brussels sprouts

Step #6 - Then add all ingredients to a bowl and toss to combine, and enjoy!
