Slightly Spicy, Citrus Salmon

This is one of my favorite, and super easy, recipes from the wonderful Alissa Segerston (you can find more of her recipes at wholelifenutrition.net

Ingredients:

  • 4 x single servings of wild Alaskan salmon fillets

  • 1/2 cup freshly squeezed orange juice

  • 1/4 cup freshly squeezed lime juice

  • 1/4 cup freshly squeezed lemon juice

  • 1/4 cup extra virgin olive oil

  • 2 T minced shallots

  • 1-2 garlic cloves, minced

  • 1-2 tsp of sea salt

  • 1/2 - 1 tsp of crushed red chili flakes

Directions:

  • Rinse the salmon fillets, and place them skin side up in a shallow baking dish.

  • Make the marinade (by whisking all other ingredients together).

  • Pour the marinate over the salmon and let it marinate in the fridge for 2-4 hours.

  • Pre-heat the oven to 400 F.

  • Drain, and dispose of, the marinade.

  • Flip the fish so the skin side is down.

  • Bake uncovered for 10 minutes per inch of thickness.

  • Alissa advises taking it out of the oven just before it's cooked through to avoid overcooking it...as it will continue to cook after you take it out of the oven.
