GFCF & Nut-Free, but Tasty Bread

If you're looking for a recipe for bread that's gluten-free, dairy-free, and nut-free that still tastes good, and doesn't fall apart when you slice it - then this one is for you!

Ingredients:

  • 4 large eggs

  • 1/2 cup olive oil

  • 2 T honey

  • 1/4 cup ground flaxseeds - soaked in 1/2 cup of water for 10 minutes

  • 3/4 cup coconut flour

  • 1 tsp baking soda

  • 1/2 tsp sea salt

Directions:

  • Pre-heat oven to 350 degrees F, and grease a 7 x 3 “ loaf pan with coconut oil

  • Place the ground flaxseeds in water while you prep all the other ingredients

  • Using a food processor, pulse the coconut flour, baking soda, and salt together.

  • Then, add the eggs, olive oil, and honey - pulse until combined.

  • Then, add in the gelatinous flaxseed/water mixture (you’ll notice the water has been mostly absorbed).

  • Pour the batter into the prepared loaf pan and bake for 35 - 45 minutes.

  • You’ll know it’s done when a knife comes out clean from the center of the loaf.

  • Let the bread cool in the pan for 1-2 hours, then enjoy!
